Whenever we visit Paso Robles and the wider central cost, we’re always keen to hear what our winemaker friends and drinking, usually we come away with a list as long as our arm but this time, things were different. Literally every winemaker and owner said they were being blown away by ‘Haliotide’… the excitement around securing an allocation was palpable.

Haliotide, (French for Abalone), is a stunning sparkling wine producer akin to a Grower Champagne label. During our visit to the Central Coast earlier this month, a short drive down the 101 highway from Paso brought us to the stunning hillsides above the town of Templeton, where we were met by the instantly likeable Nicole and Lucas Pope at their boutique winery. It was clear from the outset that this was an artisan project; a labour of love that includes a hands-on approach in the vineyards (Lucas happens to be Paso's most in demand vineyard manager), to hand riddling each single bottle, to applying every single label themselves by hand.

Even the label art is kept in house, produced by Nicole’s sister and brother-in-law, Natalia Bertotti & Michael Garlington - the modern artists behind the centre-piece to last year's Burning Man Festival!

As we enjoyed our first tasting, we immediately knew this was the start of something truly special. Allocations are super tight, but Nicole was excited about the prosect of her wines being enjoyed outside of California and was generous enough to offer us a couple of cases.

The experience tasting with Nicole and Lucas was exceptional, as we went through the full line-up: the Extra-Brut Rosé 2020, Blanc de Blancs 2019, and Blanc de Blancs Late Disgorged 2019. Read our note below to see how much we loved them, but beware: we have just  a few bottle bottles available.

We'll have them back in time to enjoy this Summer, and any lovers of great Rosé fizz - or anyone who wants to tread California's new frontier - should make sure they have some secured in the fridge!

2017 Haliotide, Stolo Vineyard Blanc de Blancs Late Disgorged, San Luis Obispo Coast 1x75cl

Blend: 100% Chardonnay Vintage production: 40 cases Disgorged: February 2024 When we heard about a Sparkling Wine producer from the very edges of the San Luis Obispo coastline, we just had to find... out. We met owners Nicole and Lucas at their boutique winery in the gorgeous hills just south of Paso. Nicole's winemaking experience of working at cooler-climate coastal sites, and Lucas's knowledge as one of Paso's most in-demand vineyard managers, makes them the dream team. Inspired by the great cuvées of Champagne, they adopted more of a 'Grower Champagne' approach by focusing on two exceptional vineyards (Stolo and Topotero) just a couple of miles from the ocean. This bracing environment produces Chardonnay and Pinot Noir full of tension and acidity, but it's the California sunshine that gives them an extra dimension. Nicole and Lucas make three cuvées: the Extra-Brut Rosé, made from 100% Pinot Noir from Topotero and given 30 months tirage; a razor-sharp Blanc de Blancs (100% Chardonnay from Stolo) that sees 4 years on its lees; and a beautifully-textured BdB Late-Disgorgement that sees around 6.5 years tirage. All wines are barrel-fermented, and the results are pure class. For us, they would sit admirably alongside some of the world's top Fizz, but it's more telling that every winemaker we spoke with was on Haliotide's allocation list (waiting list, for a few!), and ranked the wines as the best Sparkling Wines of North America. With just a couple of hundred cases made, there's only one course-of action: reserve some bottles now and find out for yourself why the hype is more than justified!
