As the Founding Winemaker at Dominus Estate (1984 to 1996), Chris Phelps is that person, and the wine in question is his Ad Vivum Cabernet Sauvignon. Chris completed his BS in Enology at the legendary U.C. David in 1981, and immediately headed west to study Viticulture at the University of Bordeaux. After graduating in 1982, he was singled-out by Christian Moueix and enologist Jean-Claude Berrouet, for extensive training at Château Pétrus in Pomerol. Such was his unbelievable talent, Moueix appointed him as Founding Winemaker for his new winery in Napa, Dominus Estate. Over 12 years, Chris produced some historic wines, including the revered Dominus 1990, 1991 (his personal favourite), and 1994 vintages. In 1996 he moved to Caymus Vineyard as winemaker before starting in own consulting business in 2003. June 2007 was the watershed moment when he started his own winery Ad Vivum. Having started working in 2005 with fruit from the cooler-climate Sleeping Lady Vineyard on an experimental basis, Chris was convinced this young site could produce world class wines, and knew this was the future site for Ad Vivum. Since the first vintage, all of Chris's fruit has come from two upper blocks that he feels are the best sites in the vineyard. The resulting Cabernet captures the classic richness and depth of Napa Cabernet while harnessing the cooling influence of the nearby San Pablo Bay to bring energy and refinement.
