Argot's grandest Cabernet Sauvignon is a cellar selection of the most complex and significantly fruited barrels, complemented by a profound tannin profile allowing for the benefits of a nearly 3-year elevage. Built from the ground up Babel is a towering proposition of a wine—provocative, pure and immediate. We could wax lyrical about the ‘Babel’ all day, but the responses of everyone we’d tried it with so far (including ourselves!) has spoken volumes: jaws to the floor, followed by minutes of silence and contemplation, routinely followed by expletive-laden praise! Blend: 65% Malbec, 35% Cabernet Sauvignon Vintage production: 580 cases The Farrow Ranch vineyard is a unique and distinctive site with two incredible blocks of terroir worthy of adding to the Devil... Proof portfolio. This special wine is a blend of Malbec and Cabernet Sauvignon, making it's debut in 2021. Winemaker Jesse Katz (Aperture) carefully selected individual vines from these blocks to contribute to this blend. Each vine is hand harvested and brought into the winery within hours of being picked. The clusters are methodically and obsessively sorted down to the individual berry. Each vineyard block is separated and will cold soak for 5 days with minimal air incorporation, allowing for optimal extraction, flowed by cooler fermentations with native yeast. Oxygen and temperature are controlled throughout the 21-day fermentation and extended maceration is determined lot by lot as we walk the fine line of full extraction and elegant, silky textures. The Cima Ladera 2021 went through malolactic fermentation in French oak barrels and are aged (sur-lees) for 22 months.

Given these extreme aspects, the farming here is all painstakingly performed by hand. The entirety of the vineyard is planted on core stone bedrock and is 95% dry-farmed. The bedrock just beneath the surface causes the vines' roots to struggle in the search for water below, resulting in a Cabernet that is compelling for its power, intensity, vibrancy, and tension.

As the Founding Winemaker at Dominus Estate (1984 to 1996), Chris Phelps is that person, and the wine in question is his Ad Vivum Cabernet Sauvignon. Chris completed his BS in Enology at the legendary U.C. David in 1981, and immediately headed west to study Viticulture at the University of Bordeaux. After graduating in 1982, he was singled-out by Christian Moueix and enologist Jean-Claude Berrouet, for extensive training at Château Pétrus in Pomerol. Such was his unbelievable talent, Moueix appointed him as Founding Winemaker for his new winery in Napa, Dominus Estate. Over 12 years, Chris produced some historic wines, including the revered Dominus 1990, 1991 (his personal favourite), and 1994 vintages. In 1996 he moved to Caymus Vineyard as winemaker before starting in own consulting business in 2003. June 2007 was the watershed moment when he started his own winery Ad Vivum. Having started working in 2005 with fruit from the cooler-climate Sleeping Lady Vineyard on an experimental basis, Chris was convinced this young site could produce world class wines, and knew this was the future site for Ad Vivum. Since the first vintage, all of Chris's fruit has come from two upper blocks that he feels are the best sites in the vineyard. The resulting Cabernet captures the classic richness and depth of Napa Cabernet while harnessing the cooling influence of the nearby San Pablo Bay to bring energy and refinement.

Estate, LEVY & McCLELLAN is one of Napa's A-list 'closed-door' wineries, producing ultra-rare wines (just 375 cases annually) exclusively available and winery-direct from Four Corners Wine in the UK. The duo produces two stunning cuvées from their Estate vineyard located high above Calistoga, both based around a core of Cabernet Sauvignon. The LEVY & McCLELLAN is their flagship cuvée. They have an almost almost obsessive focus in the vineyard and winery, with each small lot managed individually, ensuring gentle extraction and barrel fermentation for extremely high-quality, refined tannins. They are one of the only wineries to ferment solely in 225L French oak barrels, using a labour-intensive method of placing each one on rollers to rotate it and gently mix the grapes with the fermenting juice. This process is customised for each individual lot and means it takes 3 to 4 barrels during fermentation to fill just one barrel for the aging of the wine.

Founded and developed by pioneer vintner Jess Jackson, the goal of Vérité was to focus on exploring the identity of eastern-Sonoma's hillside vineyards through combining expectational sites across to showcase terroir and vintage characteristics to the highest standard. Jackson's first-choice to head the project renowned St. Emilion winemaker Pierre Seillan, who arrived for the first vintage in 1998. They both took inspiration from the most famous Châteaux of Pomerol to craft a distinctly 'Sonoma' Merlot that could stand proudly aside it's French cousins - La Muse. Vineyard is carved on steep hillsides just above the famed Dominus Estate Napanook parcel that was originally planted in 1838 by Yountville’s founder, George C. Yount. With an ideal eastern exposure, the land is bathed with morning sun and benefits from natural shade in the hot afternoons, and cool breezes from the San Pablo Bay flow constantly across the land. It's located on three volcanic knolls where soil profiles vary from deeply fractured rocks and volcanic ash, to thick clay deposits, meaning each parcel is distinguished by a unique subsoil and microclimate. At just 6.5 hectares in size it's a remarkably small site, yet the incredible complexity of the terroir allows for three distinct wines, each of a singular style. This is an Estate at the top of its game. Combined with the very talented winemaker Graeme MacDonald and owner Claude Blankiet's attention to detail, is truly worthy of an exploration.
